ALMOND CRISPS

Ingredients
50g butter
2 egg whites
100g caster sugar
50g plain flour
1 x 2.5ml sp vanilla or almond essence
50g flaked almonds

Method
Prepare a moderate oven (180C/350F/Gas mark 4).  Have ready a rolling pin.
Grease two baking trays.  Place butter in a small saucepan and melt over a low heat.  Allow to cool.
Place egg whites in a basin, add the sugar, flour, vanilla essence 25g almonds & melted butter & mix gently.
Place 4 heaped teaspoons mixture on each tray, spaced well apart.  Sprinkle with a few flaked almonds.  Bake one tray at a time until the edges of the biscuits are pale golden brown (about 8 minutes).
With a palette knife, quickly and carefully remove biscuits from the tray.  Place over a rolling pin to make a curved shape.
