AMERICAN COFFEE CAKE

AMERICAN COFFEE CAKE (There is no coffee in this cake, it is simply eaten at coffee time in the U.S.)

Ingredients
130g margarine or butter
210g soft light brown sugar
255g self raising flour
2 eggs (beaten)
245ml soured milk

For the topping
60g soft dark brown sugar
2 teaspoons ground cinnamon
30g butter, melted
110g chopped peanuts or walnuts

Method
Cream the margarine or butter with the sugar until fluffy.
Sift the flour.
Mix eggs and milk together.
Fold into mixture with flour.
Mix all ingredients for the topping together.
Spoon half the mixture into a 23 x 28 x 5 cm tin, greased and base lined.
Cover with half the topping mixture.
Spread the remaining cake mixture evenly over.
Finally cover with remaining topping.
Bake in a heated oven Gas Mark 4/350F/180C for 35-40mins or until a skewer comes out cleanly. Cool in the tin then cut into 12 pieces. Freezes well.
