APPLE SPICE CAKE

Ingredients
8oz self raising flour
pinch salt
teaspoon mixed spice
4oz butter or margarine
4oz brown sugar
2 grated apples
2oz chopped walnuts
grated lemon rind (optional)
1 egg
a little milk

Method
Sift flour, salt & mixed spice together.
Peel, core and chop apple into small pieces.  Mix with walnuts and add to mixture.
Add egg and enough milk to make into smooth mixture.
Bake in 6 inch or 7 inch round tin for approximately 1 hour on Gas Mark 3/325F/160C.
