BAKEWELL TART
Ingredients
6oz shortcrust pastry
Filling
2oz margarine
2oz sugar
2oz ground rice
1oz ground almonds
1 egg
2 tablespoons jam
Few drops almond essence
Method
Cream margarine & sugar together.
Mix together ground rice & almonds.
Add beaten egg, and ground rice mixture to the margarine & sugar alternately a little at a time.
Spread the jam over the base of the pastry.
Spread the mixture carefully over the jam.
Bake at Gas Mark 4/350F/175C for 40/45 mins.
For added attraction decorate with strips of pastry and almonds.
