BANOFFI PIE

BANOFFI PIE (can also be spelt Banoffy)

Ingredients
6oz digestive biscuits
3oz butter
1oz demerara sugar
14 z tin condensed milk
3 bananas
½ pint double cream
Coffee essence
1 chocolate flake

Method
Boil the tin of condensed milk in a saucepan of water for 2 hours turning occasionally and checking that the water covers the tin.  Allow tin to cool completely before opening.
Crush biscuits into crumbs using rolling pin or food processor.
Melt the butter and sugar in a small saucepan, add biscuit crumbs and mix thoroughly.  Spread over a buttered 8in pie dish and put in fridge to set.
Spread cooled milk toffee carefully over the base.  Slice bananas, add in layers.  Whip cream with coffee essence to taste and pile on top of the pie.  Sprinkle with crumbs of chocolate flake.
