BUTTER TARTLETS
Ingredients
8oz shortcrust pastry
4oz currants
4oz demerara sugar
1 egg
1oz butter
1 teaspoon vanilla essence
Method
Melt butter in pan, add all ingredients and mix well.
Put teaspoon in each case and bake at Gas Mark 3/325F/160C for 15-20 mins.
When cool decorate with a little icing and piece of cherry.
