BUTTERSCOTCH SQUARES
Ingredients
Pastry:
2oz margarine
2oz lard
8oz plain flour
¼ teaspoon salt
Water to make rolling consistency
Filling:
4oz brown sugar
4oz butter
4oz sultanas
1 egg
1 tsp vanilla essence
1 tbsp sugar
Method
Make pastry, roll thin and lay half on cooking tray 10ins x 7ins.
Make filling by melting butter and sugar in a pan and beat in egg, sultanas and vanilla.
Spread on to pastry base and cover with remainder of pastry.
Brush liberally with milk and sprinkle well with granulated sugar.
Cut or prick the top and cook for 20 – 25 minutes gas mark 6/400F/200C.
Cut into squares while still hot. If underside of squares are undercooked replace in oven for a few minutes upside down.
