CHEESE SCONES

Ingredients
200g plain flour
2½ to 3 teaspoons baking powder
(with fresh milk)
or
200g plain flour
1 level teaspoon bicarb
1 level teaspoon cream of tartar
(with sour milk or butter milk)
pinch of mustard
½ level teaspoon salt
25 or 50g fat
50g grated cheese
125 ml milk
1 egg (optional keep some egg for glazing)

Method
Mix ingredients together using rub in method.
Bind with milk.
Roll out to ½ inch thickness and cut into rounds.
Glaze with egg.
Bake at Gas Mark 8/450F/230C for 8 to 10 minutes.
