CHRISTMAS CAKE

Ingredients
250g butter
200g soft brown sugar
Rind of Lemon
2 tablespoons rum
1 tablespoon black treacle
8oz plain flour
1 teaspoon mixed spice
pinch salt
1kg mixed fruit
12oz currants
8oz sultanas
8oz raisins
4oz glace cherries
2oz mixed peel
2oz nuts (optional)

Method
Mix butter & sugar together.
Sift flour, spice & salt together.
Add to mixture, together with remaining ingredients.
Bake on Gas Mark 2/300F/150C for 1 hour or Mark 1/275F/135C for 2 hours in 8 inch round or 7 inch square tin.
