COCONUT TARTS
Ingredients
Prepared pastry cases with spot of jam in each
50g margarine
50g sugar
1 egg
100g coconut
(makes 24 small cakes)
Method
Cream together margarine & sugar.
Add egg.
Add coconut.
Place teaspoon of mixture in each pastry case.
Bake on Gas mark 5/375F/190C for 15-20 minutes.
(do not overcook, coconut burns easily).
