Coconut Tarts
Coconut Tarts Recipe (makes about 18-20 cakes)
- Shortcrust pastry ( see Perfect Pastry-shortcrust)
- Strawberry jam
- 50g butter
- 50g sugar
- 100g coconut
- 1 egg
- Pre-heat the oven to 190c.
Beat the butter and sugar together until the mixture has turned lighter in colour.
Add all the coconut and the egg. (The mixture will look sticky and not well combined, do not worry though)
Take pinches of the pastry and flatten into a mince pie tin. Put a small blob of jam and place in to the pastry. Then add a large teaspoon of the coconut mixture.
Cook in the oven for 15-20 minutes until golden brown.

The jam in these tartlets makes them really moist in the mouth and very tasty.
Coconut can tend to dry out the mouth so the addition of jam helps bring them to life.

The Best I have tasted brilliant and easy to make the only thing is i have to make them every other day as they are that good
A Very good site ony came a cross as i had forgot how to make them

Thank you so very much. Its half term and i get bored so easily and so revert to cooking more in the holidays. I was looking through cupboards and these were the only ingridients i had, those and the ingridietns to make pastry. so thank you so very much

this is an excellent recipe the jam sends out an excellent feel in that tarts i loovee it thankx this came across when i forgot how to make the tarts i usally make but then this helped me once again thank u very much
