cupcakes with a cherry on top
makes 12 cupcakes

165g/7oz soft unsalted butter
165g/7oz caster sugar
165g/ 7oz self rasing flour
1 tsp baking powder
3 eggs
1 tsp vanilla extract
6 glace cherries cut in half
200g icing sugar
Pre-heat the oven to 160ºc/325ºf/gas3.
Cream the butter and sugar till light and creamy.Add the vannila extract.
Beat the eggs in but with a tablespoon of flour in betwween each egg(this stops the mixture curdling).
Add the remaning flour and the baking powder untill all together.
Spoon into 12 muffin cases and bake in the oven for30-35mins untill golden brown.
to make the icing mix the icing with a couple of dops of water untill you have a thickish paste. Spoon over the cooled cup cakes and add the half cherry.
