Ingredients
250g strong flour
20g fresh yeast
pinch salt
250g butter
125ml milk
25g sugar
Egg wash 1 egg & pinch of sugar
Fillings & decoration
6-8oz icing sugar
Apricot glaze
2oz ground almonds
2oz chopped walnuts
Lemon curd
Red jam & currants
2oz chopped cherries
2oz flaked almonds
Apple puree
Method
Work 1oz flour into the butter.
Work yeast with milk.
Work in the flour.
Add sugar.
Beat until pliable.
Turn onto board & knead.
Roll into star.
Put in butter.
Roll & fold 4 times resting as needed.
Gas Mark 7/425F/ 220C.
