Drop Scone (Scotch Pancakes) Recipe
These are very similar to the shop bought ones…but even nicer. When I made them I put raisins in when they were on the griddle. Sprinkled with lemon and demerara sugar they were perfect. Instead of using bicarb and cream of tartar you can use 3 tsp of baking powder.
Ingredients
200g plain flour
1/2 tsp salt
2 tsp cream of tartar
1 tsp bicarb
25g caster sugar
1 tbsp golden syrup
1 large egg
150 ml milk
Method
1. Mix together the flour, salt, cream of tartar, bicarb, caster sugar.
2. Add the golden sugar, milk and egg.
3. Mix thoroughly. Pour little puddles of the mixture on a griddle, turn over when the mixture turns from white to cream and has bubbled. Griddle until the pancake is lightly brown.
Top with crispy bacon, maple syrup and blueberries or a topping of your own choice.
