FLAKY PASTRY

200g /8oz strong plain flour

50g/2oz lard

125ml/5floz cold water

50g/2tspbutter

2 teaspoons lemon juice

50g/2oz margerine

 

1.Mix the butter, margerine and lard together.  Divide  into 4 portions.

2.Rub ¼ of the fat into the flour. Add the lemon juice and water and form into a dough.

3.Roll the mixture into a rectangle. sread a thin layer of the fat of top then flold in half and roll it out into a rectangle againContinue procedure until all the fat is used up.
