GLAZED ALMOND FLAN

Ingredients
Pate sucre:

4oz flour
½oz caster sugar
2½ oz butter
½ egg
Approx 1 dessertspoon iced water

Filling:
3oz butter
3oz caster sugar
1½ eggs
3oz ground almonds
Glaze: 2oz icing sugar/a little water

Method
Pate Sucre : Using the smear method mix together flour, sugar, butter, ½ egg & water.  Line flan tin with paste, light smear of apricot jam.  Retain trimmings.
Filling:  Using the creaming method mix together the butter, sugar, eggs & almonds.  Fill the flan and make trellis with trimmings.
Bake on Gas Mark 4/350F/175C for 35 mins run glaze over top 5 minutes before end of cooking time.
