LEMON CHEESECAKE
Ingredients
350g curd cheese
75g caster sugar
1 lemon
1pkt gelatine powder
2 eggs
250ml whipping cream
150g digestive biscuits
50g demerara sugar
75g butter
Method
Crush digestive biscuits & add demerara sugar & melted butter.
Coat base & sides of loose bottom flan tin.
Dissolve gelatine powder in 2 tablespoons water.
Separate eggs.
Liquidise cheese, egg yolks, sugar & rind & juice of lemon.
Add gelatine.
Whisk egg whites.
Whisk cream.
Fold eggs & cream into mixture.
Pour into mould & leave in fridge to set.
