LEMON MERINGUE PIE
Ingredients
Topping
2 egg whites
100g caster sugar
60g butter
15g sugar
1 egg yolk
1 dessertspoon iced water
Filling
50g cornflour
250ml water
1 lemon
1 egg yolk
25g butter
Method
Make & bake flan “blind inch Gas Mark 5/375F/190C.
Heat water with the lemon partings.
Blend cornflour & sugar in a little water.
Strain water onto mixture & cook until thick.
Add butter & lemon yolks then lastly the eggs.
Pour into flan.
Prepare meringue by whipping together egg whites & caster sugar & pipe onto flan.
Bake for 1 hour in a slow oven Gas Mark 1/275F/135C.
