MARMALADE MUFFINS
Ingredients
2 eggs
3fl oz vegetable oil
¼ pint milk
8oz plain flour sifted
1 tbsp baking powder
½ tsp salt
2oz caster sugar
12 tsp marmalade
Method
Whisk together the eggs, oil and milk. Stir in the flour, baking powder, salt and sugar together in a bowl, then pour in the liquids.
Combine gently but thoroughly.
Half fill 12 muffin cases with the mixture.
Spoon a heaped teaspoon of marmalade into each.
Top with remaining mixture.
Bake at Gas 6/400F/200C for 20 mins.
Serve warm.
