MERINGUE (Italian)

Ingredients
2 egg whites
125g sugar

Method
Beat together in a bain marie, remove from heat and continue to whip whilst cooling. Bake for 30 minutes on Gas Mark 2/300F/150C reduce to ½ 100C until crisps.
