MICROWAVE MERINGUES
Ingredients
1 tablespoon egg white
125g icing sugar
150ml double cream
50g plain chocolate melted
Method
Sift icing sugar.
Break up egg white with a fork. Gradually mix in the sugar with fork until it forms a stiff mixture.
Knead well (add more sugar if necessary).
Cut into 16 pieces. Roll & shape each one into a 1cm oblong roll.
Place 4-6 at a time in a circle on greaseproof paper.
Microwave 1½ minutes until risen and crisp.
Remove from paper onto cooling rack.
Repeat until all cooked.
Sandwich together with whipped cream. Drizzle chocolate on top.
