PINEAPPLE CAKE
Ingredients
12oz mixed dried fruit
4oz block margarine
8oz sugar
1 tsp mixed spice
1 tsp bicarb
15oz/440g crushed pineapple with juice
8oz self raising flour
2 eggs
Method
Place fruit, margarine, sugar, mixed spice, bicarb & pineapple in a saucepan and melt gently over a low heat, simmer for 3 minutes. Leave to cool.
Add flour & eggs to cool mixture and place in an 8inch greased & lined cake tin. Bake for 1½ to 2 hours on Gas Mark 3/325F/160C.
