Ingredients
8oz puff pastry
2oz jam
Filling:
2oz butter
2oz caster sugar
1 egg
1oz flour
1oz ground almonds
teaspoon lemon juice
almond essence
Method
Divide pastry into one third/two thirds. Cut two equal circles.
Spread centre of thinner circle with jam.
Spread filling over top.
Cover with other circle.
Knock up. Crimp edges.
Cut rosettes on top.
Rest at each stage.
Bake on Gas Mark6/400F/200C for 25/30 minutes.
After baking dredge with icing sugar.
Place under grill until shiny.
