Ingredients
8oz strong plain flour
8oz butter (pref. unsalted)
squeeze lemon juice
6 tablespoons iced water
Method
Blend 2oz of flour by hand with the butter reshape into a block & chill.
Make paste of 6oz flour, iced water & lemon juice, knead lightly & chill.
Make a starfish shape thick in the centre. Put block of butter in centre. Make a parcel chill.
Roll & fold in flour like a book chill.
Roll & fold 4 times in all.
