QUEEN OF THE PUDDINGS

Ingredients
15g butter
250ml milk
2 eggs separated
50g fresh breadcrumbs
25g sugar
grated lemon rind
100g castor sugar
2 tablespoons warmed jam

Method
Add breadcrumbs & butter to warm milk.
Add egg yolks, sugar & lemon rind.
Bake for 30mins at Gas mark 3/325F/190C.
Add jam & top with meringue.
Bake for further 20 mins Gas mark 1/275F/100C.
