RAISIN AND BRAN MUFFINS
Ingredients
50g bran
225ml skimmed milk
90g self raising flour
½ teaspoon salt
1 tsp baking powder
25g sunflower margarine
40g soft light brown sugar
1 egg white, lightly beaten
50g raisins
Method
Preheat oven to Gas Mark 6/400F/200C.
Great approximately 12 deep patty tins.
Soak the bran in the milk for 5 minutes.
Sift together the flour, salt and baking powder.
Cream together the margarine and sugar until smooth and light.
Add the egg white and beat well until smooth. Add to the bran mixture and stir well.
Add the flour mixture and raisins - beat well.
Spoon the mixture into the greased bowls. Bake for 20 minutes until well risen and golden brown. Allow to cool in the tins for one minute before leaving to cool on a wire rack.
Serve warm, spread with a little sunflower margarine or honey.
