ROMSEY TART
Ingredients
8oz self raising flour
4oz margarine
2oz soft brown sugar
Topping
2 eggs
4oz caster sugar
2oz ground rice
2oz chopped cherries/sultanas
2oz dessicated coconut
½ teaspoon almond essence
Method
Rub margarine into flour and add sugar. Press down on swiss roll tin base. Bake on Gas Mark 4/350F/180C for 15 minutes.
Whisk together eggs & caster sugar until thick.
Fold in the remaining topping ingredients.
Place on top of cooked base & bake for a further 20 minutes.
