SEMINGTON CAKE

Ingredients
1lb wholemeal flour
2tsp cinnamon
½tsp salt
1lb sugar
12oz grated carrot
4 eggs
15fl oz sunflower oil
8oz crushed pineapple
4oz walnuts

Filling
4oz butter
8oz cream cheese
8oz icing sugar

Method
Mix dry ingredients together, then add the eggs and remaining ingredients.
Divide mixture evenly between 2 9inch lined cake tins and bake in oven at Gas Mark 4/350F/180C.
Leave to cool.
Sandwich together with half filling and put remainder on top.
Top with green grapes.

I think that this was named after the Barge Semington that was moored up in Gloucester Docks during the 1980s.
