Welsh Cakes

8oz self rasing flour

1 teaspoon  baking powder

3oz/75g rasins

3oz/75g caster sugar

1 large egg

4oz/100g butter/lard

milk

sift flour baking powder and caster sugar into a bowl.                                               Rub in the butter until you get the texture of breadcrumbs.                                         Mix in the beat in the egg and add to the mixture and mix. If the mixture is too dry add the milk. Roll out the dough on a floured surface and cut out with a cutter, re-rolling and cutting untill the dough is all gone bake on a griddle 5 at a time. keep in a air tight container
